Cooking House (Site of), Athlone, Co. Westmeath

On the 1837 edition of the Ordnance Survey six-inch map, a small rectangular building is marked with the label "Cooking House 1691", aligned on a north-east to south-west axis, with a field boundary cutting through the centre of the structure along its length.

It is a detail that raises more questions than it answers: a named building, frozen at a specific year, recorded almost a century and a half after whatever it once was had presumably ceased to function.

The date attached to the name points directly to one of the more consequential military episodes in Irish history. The Siege of Athlone in 1691 was part of the Williamite War, the broader conflict that followed the Glorious Revolution, and the town's position on the River Shannon made it a strategically critical crossing point. A structure identified as a cooking house from that year would most likely have served a military or logistical purpose, providing food preparation for troops during the siege operations. By the time the first Ordnance Survey mappers arrived in the 1830s to document the landscape in systematic detail, the building had apparently survived long enough, or at least its memory had, to earn a named entry on their map. Later editions of the same survey show nothing in that location, suggesting the structure had disappeared sometime in the intervening decades.

Today, a modern housing development occupies the area where the cooking house once stood, or was at least recorded. There is nothing to see, and no physical trace has been documented. What remains is the cartographic ghost of it, a label on an old map that preserves both a building and a year, long after both have otherwise vanished from the ground.
