In County Kilkenny, a brewery once operated within what the archaeological record simply calls "Gardens", a designation that raises more questions than it answers.

The pairing of industrial production and cultivated grounds was not unusual in the eighteenth and nineteenth centuries, when large estates and prosperous town properties alike might incorporate a working brewery alongside kitchen gardens, orchards, and pleasure walks. Brewing at that scale was often a practical domestic concern as much as a commercial one, supplying a household or a local market with ale at a time when water quality made fermented drinks the safer daily option.
